Herbed chicken

Ingredients - 1-2 lbs. chicken breast, thawed if frozen., dried oregano, dried basil, (or just use dried Italian seasoning if you prefer), olive oil, salt and pepper to taste.


Directions: Heat oven to 350 while cooking chicken first on stove top. In a large frying pan, heat olive oil, then add chicken, on the top, sprinkle your seasonings to taste. Once hot enough to release from pan if you're using stainless steel, then flip over using tongs. (This does not apply if you're using non-stick). Repeat seasoning process once flipped. Do not finish cooking on stove top. Transfer to casserole dish along with all oil drippings and place in oven to finish. Usually about 15-20 minutes. No need to cover.
