Gluten Free Bagels



  • 1 c blanched almond flour

  • 1/2 c almond meal

  • 1.5 tsp. baking soda

  • 2 eggs

  • 1/2 c Greek yogurt

  • 4 tbsp. butter

  • coconut oil spray

  • toppings

  • donut pan

  1. Preheat oven to 350 degrees

  2. Spray pan lightly with coconut oil spray

  3. Melt butter on low setting in microwave or in a pan on stove

  4. Measure and whisk together almond flour & meal & baking soda into one bowl

  5. Measure and whisk eggs, yogurt & melted butter into a separate bowl

  6. Pour wet over dry ingredients and combine

  7. Divide mixture into donut pan evenly just to the top of the molds

  8. Cover with toppings

  9. Bake for 20-25 minutes

  10. Let cool completely before removing

  11. Store lightly covered with foil or refrigerate in a container.

Tips:

Use greek yogurt, not regular, for better consistency.

Use a combination of the almond flour/meal as recommended, again for consistency and texture.

Toppings - use what you like - Everything But the Bagel Seasoning, sesame seeds, raisins, etc.
